Deadline Music has announced the May 31 release of a new Ratt collection, entitled Rarities, on Limited Edition Red Marble 12" Vinyl, CD, and Digital. From the ’80s metal vault comes this collection of vintage demos and live recordings of one of the scenes biggest hitmakers, Ratt. Hmmm...color me skeptical. It probably produces pellet grill levels of smoke flavor, too...aka non-existent. I had a pellet smoker for a bit and was very disappointed with it. It was simple and convenient to use, but nothing came out tasting smoky... I got better smoke on my propane grill with burning pellets in a pellet tube. My biggest takeaway from that article was this, though: Wannabe pitmasters need no longer wait for warm weather to break out the hickory and maple. TF are they talking about? I smoke my meats year round...in a northern state. Pussies...

Meat over a tray of water. Hickory wood. Doing a wild turkey breast this weekend. It's thawing now.

But a G is too steep. That's almost another big screen TV! Which I just broke down and bought another. My BIL said they'd be stoked to take my current one, so I went upgrade hunting. Hoping it's my last for a LONG while...because I'm a bit of a TV junkie. This is my 4th big screen in like 3 years... But to be fair, one of those was a return replacement due to a presumed issue...I found out later it was a piece of shit Roku unit causing the problem...and the TV I replaced was no longer available. And I wasn't as happy with what I had to settle for. So here we are...

Did you say...Pork. Steaks? Hell yeah! They're pork shoulder/butt cut in like inch or so steaks...from the what's for dinner thread... Did smoked pork steaks again...man, they're the fucking bomb! They taste like amazing smoked BBQ ribs in the consistency of steak. All things not equal, it's probably the best BBQ there is. It's super inexpensive, it's absolutely fantastic flavor, and it only takes a few hours to cook...like half the time of ribs. I think this might be the new go-to!
Came out better than last time. I smoked them a little longer and foil wrapped them longer as well. Recipe says to smoke for an hour, wrap on foil, and cook another hour, then apply BBQ and brown sugar and let glaze about 30 min. I upped the smoke to an hour and a half, foil cooked for another hour and a half, then glazed for 20-30 min. Came out like filet mignon tender steak consistency with the flavor of the best smoked ribs.
